Walk + Eat: Peanut Butter & Oat Cookies

This is my version of a healthy snack. Nevermind the chocolate, it has oats in it! And besides, the beauty of the Walk + Eat recipes is that I get to walk off these indulgences.

These cookies are great for an early morning treat to give you energy for walks. I sometimes switch the chocolate for nuts for added texture but this batch caters to my sweet tooth. Enjoy!

Ingredients

100g peanut butter
100g brown sugar
110g porridge oats
50g choc chips
1 medium egg
1tbs baking powder

Make

Mix the peanut butter, sugar and egg together until it forms a smoothe paste.

Add the porridge oats, choc chips and baking powder until well mixed.

The sticky part! Make balls with the mixture (golf ball size). Flatten with the back of a spoon.

Add to a greased baking tray.

Cook at 180c for 10 mins or until golden, but keep an eye on them!

They will be really soft but trust that they will firm up once left to cool on a wire rack.
