Walk + Eat: Festive Tiffin
It may be slightly cheeky to call this recipe ‘festive’ as I’ve merely added fragrant ginger (in the form of biscuits!) and cranberries to the tiffin. But this girl needs something simple, quick and tasty for all the December walking adventures, and ginger and cranberries sprung to mind! The texture of tiffin wins me over every single time. These would make a great gift too!

Ingredients
100g Butter
25g Brown Sugar
2 Tbs Golden Syrup
225g ginger biscuits (crushed)
250g Milk Chocolate
100g Dried Cranberries
50g Mixed Nuts
Make
Line a 20inch square tin with baking paper.
Melt the butter, sugar and syrup slowly in a heavy based pan on a low heat. Take off heat once melted
Add the crushed biscuit, fruit and nuts to the melted mixture. Mix well. Transfer to the tin and press down.
Melt the chocolate over a low heat.
Pour over the Tiffin mixture, cover and put in the fridge for 1 hour or until set.
Remove from the fridge and cut into your desired size. Enjoy!
