Salted Caramel Cookies by Archie and the Rug

Hello my name is Nicolette and I normally blog over at Archie and the Rug but today to celebrate my 3 year blogging birthday I have teamed up with a bunch of talented ladies to swap articles and meet one another’s readers.

When I first moved to Paris I did not have my weighing scales with me so I had to develop recipes that used cup measurements if I was going to get any baking done. This particular recipe is one that is simple yet looks and tastes impressive, aren’t they the best kind? Then you can create a whole batch of cookies make a pot of tea, sit back and read Mathilde heart Manech and Archie & the Rug, two great blogs in my opinion.

You will need;

1 1/2 cups plain flour
3/4 cup cocoa powder
1 1/2 tsp baking powder
2 dozen caramels
1/2 cup unrefined sugar
2 eggs
10 tbsp unsalted butter
1/4 tsp salt (plus extra for the centre of the cookies)

Method;

  1. Sift together the flour, cocoa powder, baking powder and salt together in a bowl.
  2. Beat together the butter and the sugar until pale and fluffy.
  3. Add the eggs to the butter mixture beating gently. Spoon in the flour a little at a time until the mixture it is completely incorporated into a firm dough.
  4. Scoop out a spoonful of dough and roll into a ball. Press a caramel into the centre, sprinkle with salt, and bring the dough up around the caramel and roll into a ball again.
  5. Place onto a baking tray covered with baking paper with a little space around each one for the cookie to grow.
  6. Bake for 10-15 mins.
  7. The caramels will set after they are fully cooled, if you eat them warm they are delicious but be careful not to burn your tongue.
  8. Dust with icing sugar to decorate.
